Brie and Arugula Stuffed Pork

Hey Funky Fork Friends! Stuffed pork is such an easy, delicious and impressive meal! This dish uses my apple gnocchi for the pasta, but you can always use plain gnocchi instead.

THE GOODS:
PORK:
2-3 lbs of pork tenderloin
Brie cheese
Salt and pepper to taste
SAUCE:
1 TBSP butter
1/4 cup brown sugar
1 clove garlic, minced
1 TBSP balsamic vinegar
GNOCCHI:
1/4 cup onion, diced
2 cloves garlic, minced
Olive oil for frying
SLAW:
1/4 cup apple, cut into matchsticks
1/4 fresh arugula
1 TBSP olive oil
Pinch of salt
HOW TO FORKIN MAKE IT:
Preheat oven to 400 F
To prepare pork, slice long ways around outside to open it up flat and pound out with meat tenderizer.
Add arugula and brie slices in middle of port and roll the meat around it. Salt and pepper outside of pork.
In saucepan on medium heat, brown pork in a bit of olive oil on all sides, then place on baking sheet and bake in oven for about 15 minutes to cook through.
Use a meat thermometer and ensure pork is 145 F.
In same saucepan pork was browned in, add some olive oil, butter, onion, garlic and gnocchi- cook until they have a brown crust and set aside.
In that same pan, add sauce ingredients until combined and melted.
Combine slaw ingredients and give a quick mix.
Slice pork and serve over gnocchi, topped with sauce and slaw.
