Apple Gnocchi Recipe

Hey Funky Fork Friends,

Replace potatoes with apples for a unique and light gnocchi option!


THE GOODS


2 large apples 

About 2.5 cups of flour (AP or 00 is best) gluten free 1 to 1 flour works also

1 egg

Pinch of salt 


HOW TO FORKING MAKE IT:


  1. Peel and core the apples, and cook over stove top on medium heat until soft.

  2. Pulse in food processor until smooth.

  3. Strain the liquid as you move apples into a separate, large mixing bowl.

  4. Crack egg into apple mixture, add salt and whisk with fork to combine.

  5. Add 1/4 cup of flour at a time and mix with fork to slowly combine the flour.

  6. Once a dough ball forms, flour your surface and move dough ball out of bowl.

  7. Slowly knead the dough to bring it all together. If outside is still really sticky, keep sprinkling flour on top and kneading in until outside is smooth and doesn't stick to your hands.

  8. Let dough rest for 20 minutes.

  9. Cut dough ball into strips, and roll each one out into long snakes. (If the inside of the dough is still sticky that is OK! You can sprinkle each cut piece with flour before rolling out.

  10. Cut down into 1/2 - 1 inch pieces. You can roll over a fork or gnocchi board to add ridges, or you can leave them as is.

  11. Cook in salted, boiling water until they float and add your favorite sauce!
